The Stillman Bar and Restaurant occupies the former Stuart Arms on Conval Street in Dufftown, closed since February 2020 until Fiona Brown reopened it on 31 May 2025. Brown, a former nanny who had spent 25 years working abroad, returned to her home town and took on the pub after the birth of her son, choosing the name as a nod to the town's whisky trade and to her own father, who worked in the stills. The bar keeps a wide range of malts alongside a food menu and has drawn back local regulars along with visitors following the Malt Whisky Trail. It trades Thursday from 4pm to 12.30am, Friday and Saturday from noon to 1am, and Sunday from noon to 11.30pm.
