Seven Stills

Seven Stills sits on Fife Street in Dufftown, the small Speyside town at the centre of the malt whisky trade. It is run by Patrick and Rose, who moved from Burgundy in 2016 and took on the former premises, reworking it into a combined bistro and malt whisky lounge. The kitchen serves an à la carte menu built around local produce, while the lounge offers whisky flights, tapas and charcuterie boards, and whisky-and-chocolate pairings drawing on the distilleries that surround the town. It is a small, family-run operation with a semi-private, booking-led feel rather than a walk-in bar, and seating is limited. The whisky list leans on Speyside malts made within a few miles of the door. It is independently owned and operates from this single site, opening for evening dining and selected daytime sessions.
