The only cheddar cheese still made in Cheddar itself, produced in a working dairy set into the cliffs of the gorge since 2003. Visitors can watch the seven-hour make through viewing windows most days, then buy the finished cheese, local preserves and chutneys from the attached shop and tasting bar.
