Colchester Brewery began in 2011 when Tom Knox, Roger Clark and Andy Bone set up a small plant at the Viaduct Brewhouse in Wakes Colne, a village named for the railway viaduct crossing the valley overhead. The trio insisted on double-drop brewing, an older method that transfers wort between two vessels during fermentation to clarify the beer without filtration. The brewery has since built a catalogue running past one hundred separate beers, tracked on Untappd by more than twenty thousand ratings, while distribution has grown from a handful of local pubs to shops across the country. The shop and phone lines run strict weekday hours, nine to five, with no weekend trading. Click-and-collect and local delivery are handled from the same industrial unit as the brew kit, keeping the operation to a single site.
