Hylton Espey — South African by birth, and for six years the head chef at Rastella up the hill — opened his own room on Custom House Quay with his wife Petronella in the summer of 2022. The format is the set tasting menu: the Journey at dinner, a shorter Discovery at lunch, built on daily foraging and a deliberately low-waste kitchen, with dishes that are not altered for preference. Falmouth's first Michelin Green Star followed in 2023 and was retained through the 2026 guide — the last edition, as it turned out, before Michelin retired the award that May. Book ahead; the room closes Sunday to Tuesday.
