Fairweathers Butchers & Deli has traded on The Knowl in Mirfield since 1850, making it the longest-established butcher in the area. Beef is hung and matured on the premises for a minimum of twenty-one days before preparation, and the shop makes its own pies and sausages daily, with pies regularly selling out by lunchtime. The deli counter carries continental cooked meats, olives and a range of cheeses alongside the meat trade. Owner Shaun Fairweather sources locally where possible to shorten supply chains, and the business holds a five-star food hygiene rating. The shop has picked up regional and national awards for its products since 1986 and sponsors Mirfield Parish Cricket Club. Despite changes of name over its history, it has operated continuously as a butcher's shop on the same street since the middle of the nineteenth century.
