Twins Patrick and Ed opened Jaunty Goat on Bridge Street in 2015; Ed left in 2018 to found Chalk Coffee up on Watergate Street — Chester's speciality scene being small enough that its family tree fits on a napkin — and Patrick White has run it since, adding a plant-based second shop on Northgate Street in January 2019 and taking the roasting in-house from the summer of 2020. The Bridge Street original keeps long seven-day hours and supplies beans wholesale besides. Both shops sit within the walls; the goat, for the record, remains jaunty.
