Kvasa Bakery

Kvasa is an organic sourdough microbakery on Leith Walk, run from a former solicitor's office by a small family team. Registered as Kvasa Bakery Ltd (Companies House SC749548) in November 2022, the bakery makes sourdough loaves, morning pastries and a vegan sourdough croissant using organic, largely local flour. Everything is baked in small batches on site, with the counter also stocking coffee and a short list of plastic-free provisions. The shop sits at 101 Leith Walk, part of a stretch of the street that has filled with independent bread and pastry makers over the past decade. Trading hours are limited and clearly signalled: closed Monday and Tuesday, open Wednesday to Friday mornings into afternoon, and Saturday until mid-afternoon. Kvasa's approach favours slow fermentation and a narrow, changing range over a large standing menu, applying the same sourdough discipline to its vegan lines as to everything else it bakes.
