Tamara Williams and Alec Merriman started Little Valley as a home bakery in 2013, on a Prince's Trust grant, and now bake organic sourdough and slow-fermented bread from the Old Hay Barn at the Gower Heritage Centre in Parkmill. Members of the Real Bread Campaign, they use organic flour, salt and yeast and nothing else — the loaves proved slowly and sold through their own shops in Mumbles and Brynmill, the third of which opened in 2025. It is the kind of small, principled bakery that has grown one shop at a time on the strength of the bread alone. Real bread, from a barn on the Gower, made by the two people whose name is on it.
