Tim Bouget and his wife Clare founded ODE as a fine-dining room in Shaldon village in 2007 — Taste of the West's South West restaurant of the year in 2008 and again in 2009 — and the operation has since settled where it makes most sense: an eco-built café above Ness Cove, serving all-day breakfasts and lunches Wednesday to Sunday, wood-fired pizza nights through the summer and the occasional Friday supper, with the original restaurant format surviving as pop-up events. The sourcing has been local, seasonal and sustainable since before that was a slogan, and the operator's name for the idea — true food — has not needed changing.
