Ed Williams-Hawkes bought the Salutation outright from Punch Taverns at the end of 2010, and since 2012 it has been restored and run by Tom and Amelia Williams-Hawkes, now with their daughter in the business. The format is a restaurant with rooms: six individually decorated en-suite bedrooms and a self-catering flat above a dining room whose modern cooking is listed in the 2026 Michelin Guide, with Chris Simon arriving as head chef in April 2026, and SALT — the family's fishmonger and deli — trading six days a week alongside. Breakfast, lunch and afternoon tea run daily, dinner Wednesday to Saturday, and the supper-club calendar keeps the chef-patron cooking too.
