Today Bread is a sourdough bakery and cafe on Hoe Street in Walthamstow, opened in 2016 by baker Alexandre Bettler after two years searching for premises following his earlier Bread Workshops training venture developed while studying at the Royal College of Art. The bakery stone-bakes organic sourdough loaves daily and delivers by bicycle to nearby cafes, delis and restaurants, alongside pastries, granola and a small retail selection of flour, honey and pasta for home bakers. The cafe counter serves coffee, toast and simple lunch dishes to a mostly local trade of Walthamstow residents and Hoe Street workers. Bettler continues to teach bread-making workshops internationally and treats the bakery partly as a demonstration of using bread as a tool for connection between neighbours. The shop remains a single site rather than part of a wider chain, trading most days of the week from Central Parade, close to Walthamstow Central station.
