Marmo occupies the former Guardian Assurance Building on Baldwin Street, an early-twentieth-century insurance office whose high ceilings, parquet floors and panelled walls now frame an Italian-leaning restaurant, wine bar and bottle shop. It opened in 2019 on the site previously run as Bar Buvette, led by chef Cosmo, previously of London restaurant Rubedo, and Lily, who managed the earlier restaurant in the same space. The kitchen draws on traditional Italian preserving methods, curing and pickling in marble basins visible from the dining room, and the list favours organic and biodynamic growers. Marmo held a Michelin Bib Gourmand in both the 2024 and 2025 guides. It trades from this single Old City address, with a bottle shop counter at the front selling wines to take away.
