Wilsons occupies a modest dining room on Chandos Road, opened in 2016 by chef Jan Ostle and his wife Mary Wilson, after whom the restaurant is named. The kitchen turns over a daily changing menu built around produce from the couple's own two-acre market garden in Barrow Gurney, twenty minutes outside the city, supplemented by a small bakery producing the restaurant's bread. Seating runs to two dozen covers, and the pace favours patience over spectacle: dishes are dictated by whatever the garden has yielded that week rather than a fixed menu card. The restaurant held a Michelin Green Star from 2022 before earning a full Michelin star in 2025. Lunch runs Wednesday to Saturday and dinner Tuesday to Saturday, with reservations taken through the restaurant's own booking system.
