Psychopomp has distilled gin from a former grocer's shop on St Michael's Hill since 2014, when founders Liam and Danny began working with single-shot distillation, a slower method that runs the still once rather than blending in flavourings after a base spirit is made. The core range covers Woden, the house gin, and an Old Tom style, alongside limited seasonal recipes and bespoke batches made for restaurants and other producers around the city. The distillery also makes what it describes as the first British aquavit and a Parisian-style absinthe, both departures from the gin that built its name. A bar reopened on site after a six-year gap, pouring cocktails made with the house spirits in the same room as the copper still. The business holds B Corp certification and describes itself as carbon neutral.
