Hubert Mons began ageing cheese in a cellar cut into the hillside at his home on the Côte Roannaise in 1964, supplying French producers for decades before the business reached England. Jon Thrupp met the Mons family at a Slow Food festival in 2005 and opened a stall under their name at Borough Market the following year. The shop on Lordship Lane is one of four current London sites, selling cheese matured in the company's own cellars in London and France alongside cured meats, crackers, cider and perry. Wheels are cut to order at the counter, and the shop takes Click & Collect orders from the wider online list.
