William and Lucy Lowe founded Cambridge Distillery in 2011, registering the company from their home in Grantchester before moving into premises at 20 High Street. William Lowe holds qualifications as both a Master Distiller and a Master of Wine, believed to be the only person to hold both. The distillery uses fresh rather than dried botanicals, many grown locally around Grantchester, and applies what it calls a novo-dimensional distillation matrix that varies temperature, timing and pressure for each ingredient. Visitors can book gin-blending masterclasses at the Grantchester site, open Monday to Friday from 11am to 5pm and Saturday mornings, or attend tasting sessions at the company's Green Street laboratory in central Cambridge. The distillery has been named the world's most innovative three times over.
