Fold Bistro & Bottle Shop opened on Town Street in Marple Bridge in January 2023, the project of business partners Mike and Sean, who grew up locally and asked childhood friend Ryan Stafford, a MasterChef UK semi-finalist who had cooked for Gordon Ramsay and Jamie Oliver, to run the kitchen as executive chef. Head chef Craig Sherrington, a Great British Menu finalist, joined to help develop the menu of British seasonal sharing plates with occasional international turns. Dishes have included squid bolognese with garlic bread and a Manchester tart soufflé, built around Boddington's gravy emulsion and Grandma Singleton's cheddar. The bottle shop side sells wine to take home or drink in, chosen to match the food. Five minutes' walk from Marple train station, it occupies a modest high-street unit rather than anything grand.
