Jack Knight worked as a butcher for Waghornes inside Stroud's Five Valleys food hall for three years before buying the business in 2023 and renaming it Knight's Artisan Butcher. The stall, in the indoor market on King Street, sells beef, lamb, pork and chicken sourced from free-range farms in the county, with animals reared at a slower pace for better welfare. Cutting and preparation are done on site, and the counter also stocks homemade pet mince alongside the fresh meat. It is a single unit within the market, run independently by Knight rather than as part of a wider chain of butchers, and sits among other independent traders in the food hall that replaced Stroud's former indoor market building.
