Calum Richardson opened the Bay on Stonehaven's beach promenade in 2006 with an idea that was slightly ahead of its time for a chip shop: sustainability. Nearly nine in ten of his ingredients come from within fifty miles, the fish is certified from responsible stocks, and the shop has collected something like ninety awards on the strength of it — UK Fish and Chip Shop of the Year in 2013, a Catey in 2020, Richardson himself twice named the country's best young fish frier. None of that would matter if the fish and chips were ordinary, and they are not: fried to order and eaten looking out at the North Sea that supplied them. A chip shop that took the harder, better road and got famous for it — proof that doing the responsible thing and doing the delicious thing need not be different decisions. Worth the queue, and there will be one.
