Joe Syme started roasting coffee and selling it at farmers markets before opening the Fortis Green cafe in October 2012, fitting a small Giesen roaster on site. His wife Bara began by volunteering behind the counter and now co-owns the business alongside Ben, who started as a volunteer and became head of coffee. Roasting later moved to a dedicated unit in Kings Langley, and in 2025 the team switched from drum roasting to an IMF RM20 hot-air system for more even bean development. The East Finchley shop still pours filter and espresso drinks from those beans and sells bags for home brewing, alongside grinders and other kit, through a working week that stays closed on Sundays.
