Keith Corden, a chartered engineer who spent 25 years working in Shrewsbury's environmental sector, set up Darwin Coffee with his wife Jenny in 2023 after training at the London School of Coffee. The roastery sources green beans from small, sustainably run farms and roasts each origin to its own profile, naming every coffee after an endangered species from the region it comes from and donating to the World Wildlife Fund for every bag sold. Local deliveries go out by bicycle. There is no café counter to call in at — this is a working roastery trading online and to local cafes and restaurants — but the naming convention and the conservation donation set it apart from the standard specialty-coffee pitch.
