Eilir Rogers moved her delicatessen from Grundisburgh, where it traded as Grundisburgh Dog Delicatessen, into a shopfront on Market Hill in Woodbridge and renamed it Essen. The counter runs charcuterie and cheese boards built to order, alongside retail cheese, cured meat and East Anglian wines chosen to be drunk on site as well as taken home. Dogs are welcome inside, a carryover from the old Grundisburgh name and clientele. On the first Friday and Saturday of each month the deli turns its ovens over to pizza service in the evening, extending hours beyond the usual daytime opening. Rogers deals directly with small suppliers she has built relationships with over several years, rather than buying through a wholesale catalogue, and rotates the counter according to what those producers have ready that week.
