Matt Carroll and Helen Coburn opened Fortitude in Edinburgh in 2014 and began roasting their own coffee two years later, building one of the city's most respected small speciality operations. The original York Place café has since closed, but the business carries on from a shop at Abbey Mount, below Calton Hill, and a second in Stockbridge — small rooms doing one thing to a high standard.
