ISPINI Charcuterie is the retail deli of a County Down farm-based charcuterie business run by siblings Jonny and Janice Cuddy, who began curing meat in 2016 after Jonny read a book on butchery. In 2020 they opened this shop at Rawdon Court, just off Moira's Main Street, where the air-dried and cured products they make, including fennel salami, coppa, garlic and black pepper salami and beer sticks, are sliced to order. Alongside their own charcuterie the counter carries local cheeses, crackers, chutneys and other accompaniments, and the deli serves toasties, cheese boards and pastries to eat in or take away. The business has represented Northern Irish charcuterie at national events and sits within the region's small but growing cured-meat scene. It is independently owned, and this Moira deli is its only shopfront, backed by the family's own production rather than a wider retail group.
