John Gillespie & Sons has traded as a bakery on King Street in Stranraer since 1868, making it the town's oldest working bakery under continuous family ownership. Director Iain Gillespie continues a product range built around Galloway recipes: steak bridies, Scotch pies, tattie scones and traditional morning rolls, all baked fresh before the shop opens at eight each morning. The bakery supplies wholesale customers across Wigtownshire as well as serving walk-in trade from its King Street counter, and has picked up recognition from Scottish Bakers for its savoury pastry work. Cakes are made to order for local occasions. The premises keep the plain counter-and-shelving layout typical of a working high street bakery rather than a café conversion.
