Quantock Brewery was founded in December 2007 by Rob Rainey, a former nuclear engineer who had built his own brewing equipment after years of dissatisfaction with commercial home-brew kits, together with co-founder Cheryl Ford. The pair began in an industrial unit in Wellington before moving in 2015 to a larger site at Broadgauge Business Park in Bishops Lydeard, next to the West Somerset Railway, where a taproom opened in May 2016. A 2022 investment brought a larger brew system online to expand production. The brewery produces a core cask and keg range alongside limited-edition small-batch beers and seasonal specials, sold through pubs and shops across the South West and via its own taproom. The taproom serves wood-fired pizza on Thursdays and street food on Fridays and Saturdays, with beer available direct from the brewery across the bar. It is closed on Mondays.
