Solo Bread occupies a shopfront at 220 Bebington Road in Birkenhead, founded by Harry Doherty in 2023. The bakery began as a wholesale operation, supplying loaves to other businesses before Doherty opened direct sales to the public from the same site. Everything is made with British-grown, stoneground organic grains, milled and delivered as fresh as possible, with no emulsifiers, preservatives or enzymes used in the dough. The naturally leavened, long-fermented sourdough sits alongside country loaves, buttermilk bloomers and a rotating list of buns in flavours such as cinnamon, chocolate and cardamom, plus a maple bacon scroll. Coffee and cold drinks are also served. The shop and pre-order collection point run Wednesday to Sunday, from half past eight in the morning until two in the afternoon, with weekend queues forming early for the most popular bakes.
