The Exchange Restaurantand Wine Bar

The Exchange Restaurant and Wine Bar occupies Exchange House on Queens Quay, beside the Guildhall and opposite the City Hotel. Mark Caithness ran the restaurant from its opening until his retirement, when his daughter Shauna and her husband Mark Froydenlund took over the kitchen. The couple had been cheffing at Marcus Wareing's restaurant in London's Berkeley Hotel before returning to Derry. The menu draws on relationships with local farmers and grocers for its produce, with a sommelier-curated wine list and a children's menu for family diners. The Froydenlunds have since opened a second restaurant, The Fold, at Ebrington, while continuing to run the original Exchange themselves.
