Paul and Katie Rawlinson opened Baltzersen's in October 2012, naming it for Paul's Norwegian grandmother Liv Baltzersen of Stavanger, and spent twelve years making Harrogate fluent in skillingsboller and skolebrød; in February 2025 they closed the Oxford Street café for a full rebuild and reopened it that March as Bakeri Baltzersen, folding their separate bakery shop into one door — the renaming told here plainly, because guides that print dead trading names strand their readers. The cinnamon buns survived the transition with their reputation compounding, a Wetherby sibling is disclosed, and the hours run eight to four, every day, in the Scandinavian manner: daylight, coffee, cardamom.
