Patrick Withington and Will Sutton opened Erst in 2019 after working together at Ancoats bakery Trove, where Withington ran the kitchen and Sutton pulled espresso before turning his attention to natural wine. The pair kept that pairing at Erst: a short, regularly changing menu of Mediterranean small plates matched to an all-natural wine list poured by the glass or bottle. The dining room occupies a converted warehouse unit on Murray Street, with an open kitchen at one end. Michelin's inspectors have recommended the restaurant in their guide, though the two owners still run service themselves rather than expanding to a second site. The kitchen closes for an hour and a half between lunch and dinner most days.
