Cibus

Cibus occupies the former M19 nightclub on Stockport Road in Levenshulme, opened by Giorgio Fontana in October 2021 with his business partner and head chef Marco Bracchitta. Fontana, born in the Venetian countryside, moved to London in his twenties and trained as a pizza chef before working under Giorgio Locatelli; Bracchitta brings Sicilian roots to the kitchen. The menu draws on regional Italian cooking beyond the pizzeria staples, built around sourdough bases fermented on site, with dishes chosen to represent lesser-known regions of Italy rather than a single house style. Vegetarian, vegan and children's options run throughout. The pair met while working together at Salvi's several years before opening their own restaurant, and Cibus has become a fixture of the Levenshulme dining scene since it opened.
