The Fudge House of Edinburgh has hand-made fudge from its shop on the Royal Mile since 1949, and calls itself the city's original fudge maker. Those working there now are the third generation of a family with Italian roots and a Scottish home in the Old Town. Batches are small and set by a slow-cooling cast method; visitors can assemble a box of six or ten flavours to take away.
