Hebridean Smokehouse has operated from Clachan, on the shore of Loch Eport in North Uist, since 1983, when George and Rosemary Jackson began smoking fish under the name Mermaid Fish Supplies. Fergus and Anne Granville took over the business in 2000 and kept the original method: salmon, sea trout and scallops are cured by hand and smoked over peat cut locally, since the island has no native woodland to supply a smokehouse fire. The range extends to gravlax, smoked salmon pate and bradan is gruth, a peat-smoked salmon and crowdie mix. Around ten people work there year-round, hand-slicing and packing every order for the shop and mail-order customers as far as Japan. The business sources genuine Scottish salmon stock rather than imported crosses, a point of pride among the small team.
