Nadair opened on Roseneath Street in Marchmont in 2024, run by chef partners Alan Keery and Sarah Baldry, who met working together at Wedgwood the Restaurant before opening this, their first solo venture. The 20-seat dining room serves a five-course set menu that changes daily depending on what Scottish produce and foraged ingredients are available that week, with dishes built around chanterelles, sea trout, dry-aged sirloin and caramelised honey. The drinks list favours organic wine alongside cocktails made with in-house seasonal infusions. Baldry has described the reception from Marchmont neighbours as especially warm since opening.
