Gosia opened Roots on Chesham High Street in December 2018, building the cafe around specialty coffee from Wood St Coffee and food made fresh each morning. The kitchen bakes its own loaves, brownies and pastries daily, with plant-based and gluten-free versions offered alongside the standard menu rather than as an afterthought. Lunch dishes change with the seasons and lean on local suppliers where possible, and the drinks list includes herbal teas sourced from independent producers rather than catering-standard brands. The kitchen closes at 2pm and the cafe itself at 3pm, a shorter working day than most High Street competitors, reflecting its focus on breakfast and lunch trade rather than evening covers. Roots has built a following among Chesham locals since opening, winning recognition in regional food awards.
