Sam Lomas opened Briar in summer 2024 in partnership with Claudia and Aled Rees, owners of Number One Bruton on the town's High Street. Lomas trained under Hugh Fearnley-Whittingstall at River Cottage before running the kitchen at Glebe House in Devon, and his menu here follows the same logic: a single blackboard of small plates and sharing dishes that changes with what the kitchen garden produces that week. The room mixes mustard-toned walls with a long pale blue banquette and bare wooden floors. Bread and charcuterie are made on site, and the wine list favours small growers over familiar names. Breakfast runs daily from eight, with lunch and dinner service Wednesday to Saturday and dinner alone on Tuesdays. The restaurant received a Michelin Bib Gourmand in 2025.
