Helen Evans, formerly head baker at the restaurant Flor, opened Eric's on Upland Road in East Dulwich on 8 April 2023. The bakery is deliberately small, trading only Friday and Saturday mornings, and built its early reputation on sourdough porridge bread rolled in flaked grains, all-rye tins and fruit loaves, alongside focaccia, doughnuts, croissants, pain au chocolat and morning buns. Evans sources UK-grown wheat, favouring grain from low-input and organic farming systems over imported flour, a choice that shapes the bakery's flavour and crumb. Queues often form before opening. Eric's trades from this single East Dulwich address only, with no wholesale shopfronts or second branch, its limited hours and small-batch approach a deliberate constraint rather than a stage toward expansion.
