Iain and Clair Wilson bought a fifteenth-century building on Shirehall Plain in the Georgian market town of Holt in 2000 and turned it into Byfords — part café, part deli, part all-day restaurant, part 'posh B&B', all under one crooked old roof. They have run it themselves for twenty-five years, and it has become the hub of Holt's food life: breakfast to dinner, seven days, with a shop of good things to take away. In a north Norfolk town full of independents, Byfords is the anchor of them. Go for the all-day kitchen, or stay the night in the beams.
