Liberty Coffee occupies a narrow shopfront on Northgate Street in Launceston, where Ben Statton has run the counter since December 2013. The house blend, George St, is roasted in London by Kiss The Hippo and served alongside rotating guest coffees from smaller independent roasters. Milk comes unhomogenised as standard from Trink Dairy near St Ives, a detail regulars ask after specifically. Cakes and sausage rolls are made on the premises each morning, with gluten- and dairy-free alternatives kept stocked rather than treated as an afterthought. There are no reservations and no laptops-only corners; the room stays small enough that queuing at the counter is part of the routine. Dogs are welcome in a marked section near the door. The shop closes on Sundays and Mondays, unusual for a town-centre coffee spot, and trades a five-day week instead.
