Robert Pouget de St Victor opened the shop in Oxford's Covered Market in 1983, building relationships with university colleges and city restaurants that still buy from the counter today. The shop sells Oxford Blue, a soft cheese first produced in 1995, alongside a rotating selection of English and continental cheeses chosen for flavour rather than trend. Staff cut and wrap to order and can advise on pairing cheese with the shop's own chutneys and crackers. The stall keeps market hours, closing Monday and Tuesday, opening late on Thursday until 6:30pm, and shutting at 5pm on Friday and Saturday. It remains a single counter in the market, wholesaling to the same colleges and restaurants it has supplied since the 1980s.
