Sosban & The Old Butchers is Stephen Stevens's restaurant in a former butcher's shop on Menai Bridge — an eight-seat room where the chef cooks a single tasting menu, decided by what he has that day and announced with no printed choices. It has held a Michelin star every year since 2016, the only star ever awarded on Anglesey, and it does it with a kitchen run essentially by one man. This is high-wire, personal cooking of a kind you rarely find outside a city, on an island in the Menai Strait. There are three nights and eight seats a week; book a long way ahead.
