Anthony's of Wellington occupies 41 Market Street, opened in spring 2021 by Anthony Nicholls after 32 years working for the town's previous butcher, Ken Francis. Nicholls used an inheritance from his late mother, Josephine, to fund the £80,000 fit-out, and named the bistro at the back of the shop Kinch's after her maiden name. The counter sells meat prepared on site, including venison from Buildwas in season, alongside Shropshire salumi, Bruckshaw's potatoes and Russell's pies sourced from other local producers. A bottle shop stocks regional beers, spirits, ciders and wines, and a coffee bar serves the farm shop side of the business. Ten staff now work across the butchery, shop and bistro, a considerable expansion from the single-butcher operation it replaced.
