Jason and Jacqueline Hamilton opened Carnbrooke in August 2011, building on Jason's twenty years in the butchery trade, starting with four staff and a small production unit in Dromara before settling into the current Ballynahinch Road shop and food hall. The counter covers beef, pork, lamb, poultry and venison, alongside salt-aged cuts prepared on site. A deli section sells ready meals, artisan pies and lasagnes, plus salads such as Moroccan couscous and a curry coleslaw regulars ask for by name. The business also supplies restaurants and hotels across Northern Ireland and runs home delivery with a £35 minimum order, free above £50. Northern Ireland named it Butchers Shop of the Year in both 2022 and 2023, recognition that followed years of trimming, ageing and serving meat to a growing Lisburn customer base.
