DeFINE Food and Wine has traded from 2 School Lane in Sandiway, near Northwich, since it was founded by Jon Campbell in 2000. The shop stocks more than 1,600 wines and spirits, and pairs the merchant side of the business with a delicatessen counter and an in-house restaurant where diners eat among the racked bottles. The kitchen serves a seasonal menu of small plates and tapas-style dishes using produce sourced from local suppliers. DeFINE was named Regional Merchant of the Year at the International Wine Challenge and was ranked third among the UK's independent wine merchants in a 2019 industry survey. It remains a single-site, family-founded business rather than part of a wider wine retail group, and continues to focus on smaller, independent winemakers alongside more familiar names.
