Thompson Bros atDornoch Distillery

Brothers Phil and Simon Thompson opened Dornoch Distillery in 2016 after a crowdfunding campaign backed by 200 whisky enthusiasts, growing from a four-person team to seven within its first years. The distillery focuses on reviving historic distillation styles rather than following standard modern methods, alongside an organic Mediterranean gin that has picked up international medals and sells in more than a dozen countries. In 2022 the Thompsons moved operations into a new headquarters and shop at Station Square, where visitors can browse Dornoch Single Malt Scotch Whisky, the gin, and other Scottish spirits. The brothers also run the whisky bar at the family's Dornoch Castle Hotel nearby. A second, larger distillery, Struie, is under construction outside town.
