Jack opened Win's Bakery in a railway arch on Tilbury Road in early 2025, naming the shop after his nan, who first took him to a local family baker's as a child. He spent around eighteen months working as a butcher, including a year at the nose-to-tail restaurant Manteca, and took advice on the Tilbury Road site from one of the owners of a well-known Broadway Market butcher's shop. The bakery's pies and sausage rolls reflect that background, filled with whole-muscle cuts rather than processed mince. Jack runs the counter with James, trading Saturdays only, between railway arch neighbours Swirl and Chop Shop Tavern. The menu stays narrow: pies, pasties, bacon barms and sausage rolls, made with traditional methods rather than the elaborate patisserie that has come to define much of east London's baking scene. Win's has no second branch.
