Witchmark Distillery occupies a Grade II listed barn dating to the 1600s on the Fonthill Estate near Salisbury. Alistair Munro and Jon Carson, previously running an experiential marketing agency together, conceived the project in October 2020 and began distilling in 2023, using barley grown on the estate and water filtered through local limestone. Current production centres on gin and vodka, with English single malt whisky maturing in cask as a longer-term project; the distillery marked filling its one-thousandth whisky cask in 2026. The former grain drying barn now serves as a visitor centre and shop. Visitors can book behind-the-scenes tours and tastings, or attend Witchmark's gin school to distil a bespoke recipe on a personal copper still and take home a labelled bottle. The business holds B Corp certification and operates from this single estate site rather than multiple distilleries.
