Piers and Sophia Milburn run their restaurant inside a three-acre eighteenth-century walled kitchen garden at West Hatch, and the garden is the menu: chef director Darren Broom cooks what the beds and the season hand him, with a sustainability record rated outstanding by the Food Made Good standard in 2023. The 2026 Michelin Guide made it briefly historic — the only restaurant in Britain and Ireland holding a Green Star and a Bib Gourmand at once, in the final year before Michelin retired the Green Star altogether. Lunch runs Wednesday to Sunday; dinners come with the events, and glamping beds mean nobody has to leave promptly.
