Iain Keeling roasts coffee from a small industrial unit on Harpur Hill Business Park, moving into coffee after building Simply Thai, the Buxton restaurant he still runs with his wife Mim. The roastery buys green beans through direct trade lines, dealing with named farms rather than anonymous lots, then hand-roasts small batches on Sanremo equipment for cafés, restaurants and hotels across the Peak District. Visits happen by appointment only, since the unit is a working roastery rather than a retail shop, but Iain and Mim run tasting sessions and barista training for wholesale customers learning to pull a better shot. Blends are built to order for individual venues instead of being sold off a fixed list. The unit sits among engineering workshops on the edge of Buxton, a short drive from the town centre.
